Summer has finally arrived! It's hot. Kids are in the pool. If you're looking for a fun summer treat to cool them down try these fun-shaped, red white and blue ice cream popsicles.The creamy ice cream insides are made with red Blue Bunny® Cherry Pickin' Chocolate® ice cream. The outside is coated in white chocolate dyed blue and then drizzled with more white chocolate.
You can use any flavor of Blue Bunny® ice cream for the inside of this treat but I found that the Cherry Pickin' Chocolate® worked best with the red, white and blue color scheme.

To make this recipe just purchase Cherry Pickin' Chocolate® ice cream at your local Walmart. My other ice cream favorites are Bunny Tracks® and The Original Bomb Pop® also found in the frozen foods ice cream isle at your nearby Walmart.
Instructions
Let your ice cream sit out and soften. Scoop the ice cream into your molds and pat down so that it reaches all the crevices in the mold. I used this silicone star mold however you can use any popsicle mold. If you do decide to do a star shape I will warn you that your ice cream must be absolutely frozen when you remove it from the mold otherwise the ice cream will break. If you have a deep freezer this will help. If not, it may be best to stick with simple shaped popsicle molds. Freeze ice cream overnight.
The next day melt a 16 oz bag of white chocolate and add 3-4 tablespoons of coconut oil.
The consistency of your chocolate should be "drippy". Add your blue gel food coloring. Let cool to lukewarm temperature.
Take out one ice cream star and place on a piece of wax paper. Slide a popsicle stick in the bottom of your star.
Scoop your melted blue chocolate over your ice cream star. The chocolate should harden immediately. If not, add more coconut oil.
Put back into the freezer for about 5 minutes.
Melt about 8 oz of white chocolate with 2 tablespoons of coconut oil for the same drippy consistency.
Remove your star from the freezer and drizzle the white chocolate mixture over the star with a spoon in a quick back and forth motion.
Put back into the freezer to cool.
Tada! You're done! Repeat for however many stars you have left.

Great recipe! I like these stars! This Sunday it`s my sister`s B-Day.. I will try to cook such stars with my girlfriend. I hope this is easier than the academic writing LOL
